Monday Meal Planning with the Thompson’s

I decided to get wild on a Monday morning and change up the title on the title of the series (? is that the right word) I have on my blog. How’s that for exciting? Since I typically meal plan, Sunday or Monday, I decided to continue sharing my weekly meal plans on here on Monday mornings to hopefully give you some inspiration in the kitchen.

Landon and I have a lot of athletic goals, but we also love to enjoy the meals we are eating too. If you’ve followed my blog for anytime now, you probably know that I had an eating disorder when I was in high school. Food used to scare me and completely control my life, now it feels so good to enjoy food for what it is – nourishment and a tool that brings people together. We love simple, fun meals that keep us nourished, filled, and help aid in recovery for our athletic pursuits!

Here is a sampling of what we will be having in the Thompson household this week

Monday – Homemade tomato soup (my friend Natalie made one similar to this recipe and I couldn’t stop thinking about it all weekend long) + a side salad and some grilled cheese sandwiches. YES

Tuesday – Taco salads (basic organic ground beef with salsa + homemade guacamole + sauted peppers and onions) with cilantro lime rice (I use this recipe and it is amazing)

Wednesday – Detox lentil soup via Pinch of Yum

Thursday – Chicken ‘nuggets’ + roasted root vegetables (sweet potatoes/carrots/broccoli/onions)

Friday – Homemade pizza with millet pizza crust via Run Fast, Eat Slow

Saturday – Leftovers

SNACKS/Desserts

Homemade apple crisp (we will probably eat this on Friday or Saturday)

Protein bars
