Easy, Four Ingredient Oat Bars

Woah, it’s been a hot minute since I last share a recipe with you guys, hasn’t it? My long recipe hiatus was not inetional and I am more than ready to come back and share with you guys some new things I have been cooking up and enjoying. However, let’s be honest, most of my recipes that I am making now a days are super simple, made with few steps, and easy to snack on, because #lifewithababy. But, I think most of us can agree, those are the kind of recipes we like, right? Ain’t nobody got time for a time-consuming, complicated granola bar recipe.

But seriously, sometimes the best recipes are the ones that really aren’t too complicated and come together in ONE BOWL. Yes people, ONE BOWL. Hallelujah! Let us rejoice.

And just because you might need some more convincing, these granola bars remind me of delicious un-baked oatmeal cookies. You know the ones that are sweet, slightly crunchy from the oats, and a little gooey? YES. THOSE ONES.

The secret though are although they taste like cookies, they are packed with nutrition, healthy fats, and complex carbs to give you a quick energy boost when you need it!

So, grab a bowl and some oats, and let’s get this party started.

Four Ingredient Oat Bars

Ingredients

  • 2 c. rolled oats
  • 1 1/2 c. creamy, all natural peanut butter
  • 1/2 c. honey
  • 1/2 c. melted coconut oil
  • 2 c. oats
  • optional add ins: cinnamon, vanilla extract, raisins, chocolate chips (dark chocolate is strongly suggested), nuts, flax seed, chia seeds, shredded coconut, etc.)

Method

Add all ingredients into bowl (the only bowl you will use in this recipe!). Stir together until completely combined and press into 8×8 pan. Cover and freeze until firm. Cut into squares and enjoy!

*Note: I enjoy these bars frozen, but you can store them in the fridge too! Whatever floats your boat.
