Chia Banana Pancakes (Only 3 Ingredients and Gluten Free!!)

Light, fluffy, and made with only three ingredients, these Chia Banana Pancakes make a delicious breakfast or dinner. These are so flavorful that they are best served plain or with just a little drizzle of pure maple syrup.

I love breakfast food. I enjoy smoothies, eggs, waffles, toast, and pancakes! Especially when the pancakes are made with only three ingredients!

That’s right- these pancakes are made with only three ingredients, they are gluten-free, and full of protein.

Chia Banana Pancakes 

(Single recipe makes 3 large pancakes)

1 Large banana

1 Large egg

1 Tbsp. Chia seeds

Method 

Mash banana in bowl. Whisk in egg and add chia seeds. Pour 1/3 c. of batter onto hot, sprayed skillet. Watch the pancakes (they will be bubbly like regular pancakes when it is time to flip.) Warning: the hardest part about this recipe is flipping the pancake!

In one swift motion, flip the pancake and cook until the other side is golden brown. Don’t feel bad if they fall apart. They still taste the same! 

Enjoy plain or topped with maple syrup, coconut oil, butter, or peanut/almond butter.
