Simple Cheesy Potato and Kale Quiche

This simple quiche, filled with eggs, potatoes, cheese, and kale, is tasty, filling, and perfect for breakfast, brunch, or dinner! Pair with fruit and toast for a complete meal.

Landon and I are big egg fans. I don’t know of many other foods that are so versatile. We make scrambled eggs, fried eggs, egg wraps, egg salad, 2 ingredient pancakes, hard boiled eggs, and when I’m feeling fancy…quiche.

I don’t know why I wait for special occasions to make quiches, because, really they are so simple!

Last night, I felt extra ambitious and whipped this quiche up for dinner tonight. Don’t you just love it when dinner is all prepared ahead of time? I sure do!

Simple Egg, Potato, Cheese, and Kale Quiche

  • 8 large eggs
  • 1/4 c. Milk
  • 3 large potatoes (peeled, cubed, and cooked)
  • 6 oz. cubed sharp cheddar cheese
  • 1 c. Chopped kale or spinach
  • 1 tsp. Salt
  • 1 tsp. Garlic powder
  • 1 tsp. Parsley

Method

Peel, cube and cook potatoes (I boiled them) until fork tender. Drain and set aside. Whisk 8 eggs together, add milk, cheese, seasonings, kale, and potatoes.

Pour mixture into greased 8 inch glass pie plate.

Bake at 350 for 25 min.

Cool for 5-7 min before cutting. Serve with whole wheat toast and fruit. Enjoy!
