Dinner at the Thompson House (Meal for the Week)

Hello friends and happy Monday! This weekend went by all too quickly, but it was a good mixture of some much needed down/family time.

On the menu this week – THIS recipe. So excited to try this one out.

Before the week get started and the craziness begins, I wanted to share with you a quick run down of the meals we have planned for the week. I am all about SIMPLE and nutritious meals. I love to get in the kitchen and cook a complicated meal, but I also love to be efficient and organized. Keeping my meals simple yet delicious and nutritious helps me stay on task and also enjoy the food too. I don’t know if you are like me, but when I read an ingredient list that has more than 10 or so items on it, I kind of check out mentally, haha.

So, here’s to SIMPLE meals, yet wildly delicious. I’m all about that life.

Meal Plans

Monday – I crave an extra easy dinners on Monday, since I am just getting back into weekly life. Monday dinner = Oh She Glows spiced lentil soup + salad. I almost checked out when I noticed how many ingredients are in this soup, but it is mostly spices and spices I can handle.

Tuesday – Chicken fajita salads! Basically, I make chicken fajitas + throw it on top of lettuce and add some guacamole and call it good. Simple and delicious.

WednesdayCreamy, Thai sweet potato curry via Pinch of Yum + rice

Thursday – Breakfast for dinner > scrambled eggs + roasted vegetables (carrots, broccoli, sweet potatoes and regular potatoes)

Friday – Homemade pizza (crust recipe from Run Fast, Eat Slow) + side salad

Saturday – Leftovers

Sunday – Dinner salad with whatever protein/toppings we can find

SNACKS/ DESSERTS

Easy, four ingredient protein bars

Homemade apple crisp (I really need to share this recipe with you all asap! But it is similar to this recipe)


And that’s a wrap! Meals planned and now it is just the actual making them part that needs to happen.
