Zuchinni Oatmeal Dark Chocolate Chunk Cookies 

These soft cookies studded with dark chocolate chunks taste so good, you would never guess they are healthy too. Packed with veggies and flavor, these cookies will not disappoint.


How do you make a ordinary Monday a fantastic Monday? You start off your morning with a run and in the afternoon, you make cookies.

Zuchinni oatmeal dark chocolate chunk cookies that is. 


This afternoon, I realized I only had one of my healthy cookies left. Thankfully, within a half an hour that changed.

During the week, I love having healthy desserts on hand. That way, when my sweet tooth strikes, I have a healthy option to reach for! 


These cookies are soft and tender, like a cross between zuchinni bread and a regular oatmeal cookie. 

Enjoy with a cup of milk or (highly recommend a hot cup of coffee!) 


Zuchinni Oatmeal Dark Chocolate Chunk Cookies 

Ingredients 

  • 2 c. Shredded zuchinni 
  • 2 tbsp. Melted coconut oil 
  • 2 large eggs 
  • 4 packets stevia 
  • 1 1/2 c. Oats (1 c. blended into oat flour, 1/2 c. Whole oats) 
  • 1 tsp. Cinnamon 
  • 1 tbsp. Flaxseed 
  • 2 tsp. Baking powder 
  • 1/2 c. Dark chocolate chunks (or more for good measure!)

Method 

Combine shredded zuchinni with wet ingredients. Mix together dry ingredients in a separate bowl. 

Combine wet and dry ingredients together. 

Once mixed, let chill in fridge for 10-20 minutes while oven preheats and the kitchen gets cleaned! 

Bake at 350 for 15 min. 

Let sit (if you can wait!) for 5-10 minutes until you serve.
