WIAW: Burrito Pie

You know those dishes that are so simple you forget how simple they are? We have a general rotation of dinners that come and go in the Houston household. Sometimes, it seems like I always choose the most complicated dish to make. When we decided on Friday to make one of our favorites, Burrito Pie, it surprised me how quick and tasty this dish is. I guess I have the memory of a gold fish, or maybe I was just rushed to make it. Either way, Burrito Pie is a tasty dish that can be made several different ways to satisfy different people.

1. Burrito Pie can be made with meat (specifically beef) to satisfy the carnivore in your family.

2. If you aren’t feeling the beef, you can add turkey or chicken for a lighter spin to the dish, while still satisfying your carnivorous family.

3. If you are vegetarian, we have options too! Throw in some lentils and quinoa to add texture and complete protein.

Once you decide what route to take, you can then go ahead and start your recipe.

Burrito Pie

1 can Refried beans (make sure to get the fat-free or vegetarian kind to avoid hydrogenated oil)

1 lb. hamburger/turkey/ground chicken OR substitute 1/2 c. lentils 1/2 c. quinoa

1 pkg. Taco mix

8 oz. shredded cheddar cheese

Four whole wheat flour tortillas or corn tortillas.

Brown meat (if not using meat, skip this step obviously). Add beans and taco mix with 1/3 c. water to browned meat. (If using lentils/qunioa add them to beans/taco mix and stir together with 1/3 c. water.) Once first three ingredients are mixed together, layer meat mixture, cheese, and tortilla. Repeat three layers high and top with last tortilla and cheese.

Bake at 350 for 30 min or until edges are bubbling. Set out and let stand for five minutes before serving. Top with salsa, plain greek yogurt, lettuce, onions, guacamole, or whatever else your heart desires. Enjoy!
