Peanut Butter Protein Bars 

Oh peanut butter. We’ve had a long history, you and I. I really like peanut butter. However, growing up, I didn’t like it at all and couldn’t stand peanut butter and jelly sandwiches. My poor mother had to resort to either jelly or turkey sandwiches for lunch. I don’t think I made lunch easy for her. 

 Around junior year in high school, I grew to adore peanut butter. Especially the kind shown below. So.good.

I now like peanut butter in all forms: by the spoonful (personal favorite), on toast, sandwiches, oatmeal, and in protein bars!


When Landon and I were engaged, I made these for him quite often. So ladies, these peanut butter bars are man approved! (Score!) 

So, without further ado:


Peanut Butter Protein Bars:

1. C Peanut Butter 

1/3 c. Honey 

1/2 Tsp. Oil (Evoo) 

2 Tsp. Water 

1 C. Protein powder (either soy, whey, work best) 

1/3 C. Rice Krispies or any comparable cereal 

1/3 C. Chocolate chips (optional)

Mix peanut butter, honey, oil, and water together. Slowly mix in protein powder. Once all combined, fold in Rice Krispies. (The mixture will be very thick.) 

Now, this is important. There are two options for the chocolate chips. Either melt the chocolate chips and spread over bars or sprinkle on top like the photo above. 

Press into a 8×8 pan and chill in the fridge for an hour or more before enjoying. 
These are perfect for a pre or post workout treat or midday snack.
