Gluten Free Double Fudge Protein Brownies

So moist and decadently fudgy tasting, you will never miss the butter or refined sugar in this recipe! These brownies make the perfect guiltless dessert or dare I say, even mid afternoon snack. Serve plain or top with homemade whipped cream for an even more indulgent taste.

Nothing like starting your Monday off with a brownie recipe, right? Don’t worry, these won’t wreck your plans to start off the week on a healthy note, because these babies are not only delicious, but also made with all healthy ingredients!

About a week ago, I was craving something sweet, but I wanted to keep my sweet tooth under control with a healthified treat. Enter: Gluten Free Fudge Protein Brownies! I’ve been snacking on these all week long and the Thompson household is quite happy about it. These brownies are best enjoyed fresh, but can be stored in an air tight container in the fridge for about a week.

A few notes about this recipe…

  1. I use oat flour in the recipe to keep them gluten free. (I do eat gluten, but I wanted to make a treat that everyone could enjoy!) Feel free to sub regular flour in the recipe, but at your own risk. I haven’t tried it out!

  2. Instead of butter, I used coconut oil. Feel free to use olive oil if you don’t have coconut oil!

  3. Lastly, this recipe calls for 1/4 c. of coconut sugar, however if you don’t have coconut sugar, you can use brown sugar, turbinado sugar, honey, stevia, maple syrup, etc.

These make a perfect dessert, late night treat, or even post-workout snack. Pair with a hot cup of coffee (or a cold glass of milk) and enjoy!

Ingredients

  • 1 c. Rolled oats (ground up into oat flour)
  • 2 scoops chocolate whey protein
  • 1/4 c. Coconut sugar
  • 1/4 c. Cocoa powder
  • 1 tsp. Baking soda
  • A pinch of salt
  • 1/2 c. Plain Greek yogurt
  • 1/2 c. Unsweetened applesauce
  • 2/3 c. Melted coconut oil

Method

Blend oats in blender until they turn into a flour texture. Once blended sift all dry ingredients together. Combine wet ingredients. Stir together wet and dry ingredients and pour into an 8×8 (batter will be thick!), greased baking dish. Bake at 350° for 20 minutes or until the center is firm to the touch. You want the brownies to be slightly underdone, but not wet. Cool and enjoy!
