Five Ingredient Date Bars

 

Chewy, packed with nutrition and flavor, these date bars are not only delicious, but healthy too! With only five simple ingredients, these bars can be whipped up in a flash and eaten even faster! These make a perfect pre or post-workout snack, mid-afternoon treat, or on the go breakfast!

As stated before in my previous blog post, it’s been a while since I last shared a recipe with you all. My recipe development hiatus was unintentional, but a little thing called, motherhood, took over. The other day, while Landon was home and watching Benaiah, I took full advantage of having another pair of eyes on the little man and whipped up these bars. Landon approved and recommended I share them with you all. That was a great idea, but it meant we had to restrain ourselves from eating all of them since I still had to photograph the recipe.

We triumphed. There were a few left and I jumped on the chance to snap a few photos before the rest disappeared.

But, I guess if you are going to be addicted to anything, you could do worse. Packed with nutrition that comes from five easy ingredients, these bars have a lot of good things in there for you!

A note on the ingredients > I use cashews for these bars, but I think almonds would be great too. I also use peanut butter, but almond butter would be fantastic too! Also, I didn’t have any chocolate chips on hand, but I think they would be a delicious addition. You get the idea, they are versatile. And in my opinion, those are the best recipes.

Ingredients 

  • 1 c. cashews
  • 1 1/4 c. pitted dates
  • 2/3 c. peanut butter
  • 1/3 c. honey (or more if the mixture is too dry and crumbly)
  • 1 c. rolled oats

Method

Place all ingredients in food processor or high powered blender (I used my Ninja) and blend until ingredients come together like cookie dough.

Scrape out of blender, and press into pan. Freeze for 10 minutes. Cut into squares and enjoy!
