Egg White Power Oatmeal

I know what you are thinking. Eggs in my oatmeal? No thank you. BUT trust me on this one guys, the egg whites not only make your oatmeal super fluffy, but also super filling, thanks to the added boost of protein!

Lately, it’s been raining here quite a bit, which makes a warm bowl of oatmeal taste about 100x more delicious.

I don’t know about you guys, but I think if I had to, I could just live off breakfast food. I could have my typical protein smoothie (the addiction is still going strong) in the morning, eggs for lunch, peanut butter toast for a snack, and waffles for dinner. That would work, right? Just throw in some veggies throughout the day and I would say that is a pretty much, perfect day.

So, if you want a fun breakfast recipe or any time of the day recipe, give this one a whirl! You won’t be sorry.

Ingredients

  • 1/2 c. Rolled oats 
  • 1 c. Liquid (I use water)
  • 2 egg whites 
  • 1 tsp. Cinnamon 
  • 1 packet stevia
  • 1 tsp. Honey 
  • 1/4 c. Blueberries 

Method 

Pour all ingredients except flax seed, egg whites and blueberries into pan and bring to a boil. Once boiling reduce heat immediately and continuously stir. Whisk in egg whites while oatmeal is simmering and keep whisking until the egg whites are fully incorporated into the oatmeal. We aren’t going for scrambled egg whites! 

Once oatmeal is thick and egg whites are incorporated, pour into bowl and top with flaxseed, blueberries, and a light drizzle of honey! Eat once cooled (no burnt tongues allowed!) and enjoy!

  • Strawberries
  • Bananas
  • Almond butter
  • Peanut butter
  • Chopped nuts
  • Pure maple syrup
  • Coconut shreds
  • Cacao nibs
