Easy and Healthy Mexican Beans and Rice 

I am a big fan of one dish meals. I love having all my nutrients in one   dish. This casserole is fantastic for busy week nights or full weekends because you can prepare it the day of and throw it in the oven when you are ready. 

Easy and Healthy Mexican Beans and Rice:

  • 1 1/2 c. Brown Rice
  • 1 can Corn 
  • 1 can Black Beans 
  • 20 oz. Salsa 
  • Spinach (a large handful)
  • Kale  (a large handful)
  • 1 c. Cubed cheese (sharp cheddar, pepper jack, or mozerella are all great choices) 
  • 2 Tbsp. Chili powder 
  •  2 Tsp. Cumin 
  • 1 Tsp. Adobo seasoning (or salt) 
  • 2 Tsp. Parsley 
  • 1 Tsp. Garlic powder 
  • 2 Tsp. Oregano 
  • 1/2 c. Shredded mozerella or cheddar 

Method

Cook brown rice. Once cooked, put into big bowl, along with all other ingredients except shredded cheese. 


Mix all ingredients together and place into 9 x 13 pan. 

Top with shredded cheese and bake at 350 for 30 minutes or until bubbly. 


I highly recommend serving it with guacamole!
