Chickpea, Brown Rice, and Spinach Veggie Burgers 

Landon is such a great guy. He’s a meat lover, but he also appreciates a good veggie burger too. What a champ! 

I love veggie burgers and especially when they are homemade. This recipe is adapted from Taralynn’s recipe (you can find the original here.) 

Chickpea, Brown Rice, and Spinach Veggie Burgers

  • 2 c. Spinach 
  • 1 can chickpeas (drained and rinsed) 
  • 1/2 yellow onion, chopped
  • 2/3 c. Cooked and cooled brown rice 
  • 1/3 c. Ground flax seed 
  • 1 tsp. Salt 
  • 1 tsp. Garlic powder 
  • 1/2 tsp. Adobo seasoning 

Method

Put all ingredients into food processor or blender. Mix until it feels like cookie dough and not all ingredients are blended completely. 

Form into patties, as big as you want them. (The burgers don’t shrink like regular meat burgers.)

After burgers are formed, place onto a heated iron skillet that is lightly oiled. Cook burgers until they are brown and crispy on the outside. Flip and cook until the other side is the same color. 

Once cooked, serve immediately. Serve on whole wheat buns or by themselves. 

I served mine with roasted sweet potatoes and asparagus.
