Black Bean Burgers 

Flavorful and filling, these veggie burgers are simple to whip up and perfect for a summer barbecue or a quick dinner. 

Last night, I decided I wanted a veggie burger, but I wanted a black bean based burger and not my usual chickpea burger. I looked at a few recipes, but I couldn’t find one I liked. 

The solution? Create a recipe. So that’s just what I did.  

The result? In Landon’s words: “One of the best veggie burgers, if not the best, that I’ve ever had.” He’s such a winner. 😉 


Black Bean Burger: 

2 cans Black Beans 

1/2 White onion 

1 Large zucchini 

1 small orange pepper 

4 Tbsp. Whole wheat bread crumbs 

2 Tsp. Garlic powder 

2 Tsp. Chili powder 

1 Tsp. Adobo (or salt)

1 Large egg 

Method:

Combine all ingredients in food processor (or blender) except egg. Blend until just combined- don’t over blend. 

Transfer mixture into bowl and add egg. Combine completely. 

Shape into patties and bake at 425 until firm. (Should be about 20 minutes.) 

Enjoy with any toppings your heart desires. I highly recommend serving with sweet potato fries on the side. 

I topped mine with ketchup and wrapped it in a large collard green leaf. (Don’t knock it until you try it!)
