Banana Bread Muffins 

Moist and full of flavor, you’ll never guess that these are secretly healthy. They are perfect for breakfast or quick snack. These delicious muffins are made with only seven ingredients and are also dairy free, refined sugar free, and made without oil or butter which means  you can feel free to enjoy one (or two) without feeling like you are splurging. 

Yesterday, I had a couple bananas that desperately needed to be used. After contimplating what I wanted to make with them, I decided to whip up an “experimental” muffin recipe. I was pleasantly surprised with the way they turned out and wanted to share with you all.

As mentioned before, these have no extra added sugar, no added fats, and are dairy free, but not without flavor. I recommend using extra ripe bananas for the best flavor. 

Healthy Banana Bread Muffins

3 Ripe and Large Bananas

1 c. Pitted dates

2 Eggs

1 1/4 c. Whole Wheat flour

1 Tbsp. Baking powder 

1 Tsp. Baking soda

1 Tsp. Cinnamon 


Method 

Blend bananas and dates in food processor or blender until completely combined. Add both eggs in and mix until just combined. Pour mixture into bowl and add rest of ingredients. Mix, but be careful to not over-mix. 

Scoop mixture into greased muffin tins and bake at 350 for 12-15 minutes. 


Once cooked, pop out of tins and enjoy with jam, peanut butter, butter, or (my personal favorite) coconut butter.
