A Simple and Perfect Valentine’s Day 2017

Hello and happy Wednesday to everyone this morning! I hope you all had a great time celebrating Valentine’s Day, however you celebrated. Yesterday, Landon and I kept our day pretty low key and celebrated at home since tonight we are going to have a date night out! Although it was a laid back type of holiday, we starting celebrating bright and early, starting right around seven in the morning

I intentionally set our alarm for six o’clock, since I wanted to make sure I had plenty of time to make Landon a fun, surprise breakfast. I may be exaggerating about the ‘surprise’ part of the breakfast, since I wear my heart on my sleeve and I’m 99% sure Landon knew what I was up to. Anyways, both Landon and I slept through our six o’clock wake up call and ended up rising at seven. Thankfully, I didn’t need too much time and I was able to whip up a spinach-cheese omelette with homemade donuts (!) on the side.


I got the recipe for the donuts via Chocolate Covered Katie Chocolate Covered Katie and they did not disappoint- moist, sweet, cake-y, and practically melt in your mouth. I’m not even a huge donut fan and I loved these. I don’t own a donut pan, so I baked these guys in my mini muffin tin, but it worked just as well.


After sending a very happy Landon off to work, Niah and I hung out together before I started my super sweaty leg day. I used Julie’s (from Pbfingers) leg burner workout leg burner workout and it definitely lived up to it’s name. You know it’s a good workout when your legs are literally shaking afterwards.

The only disappoint from yesterday was a smoothie fail. I know, I know, I make them every day, but sometimes there is a flop every now and then. Yesterday was one of those days, so I ended up eating half of it before resorting to a spoonful of peanut butter and another cup of coffee to round off my breakfast.

The rest of the morning, Niah and I spent tidying up the house, working on a few blog related things, and preparing lunch. Landon came home for a quick bite around one, before heading out to run some important errands. 😉 I ate a fast and easy lunch which consisted of a salad with quinoa + some nuts + an orange.


Our afternoon quickly passed with some more cleaning, preparing dinner, and walking around town. Since the sun was shining yesterday, I bundled Benaiah up and we headed out for a short walk, where he quickly fell asleep. Once we came back home, I ended up being able to transfer the sleepy boy out of the stroller and into his crib with little difficulty. Mom win!

While he slept, I finished my devotions, sipped on some coffee, and soaked in the afternoon sunlight as it streamed through the windows. It was there as I looked around at our home and peeked into our room which held a sleeping Benaiah, that I felt such an overwhelming sense of gratefulness for all the graciousness God has shown Landon and I. Those moments = priceless.


Shortly after I finished my devotions, Landon came home from work. Since we are going out tonight, I kept yesterday’s dinner simple with homemade Chipotle bowls. We finished our dinner with steamy, strong cups of coffee and my healthy truffles (recipe to come soon!).  Landon surprised me with earrings and a sweet poem for Valentine’s Day, which left me all misty eyed.

These kinds of days are beautiful, aren’t they? The days that nothing too out of the ordinary happens, but life and love is celebrated and moments are cherished. I’ve come to realize that it’s really not just the moments that make life beautiful, but what we do with them.
