Peanut Butter Dark Chocolate Chunk Oatmeal Cookies (Secretly Healthy!)

Dark chcocolate chunks and peanut butter make these oatmeal cookies taste rich and indulgent. Thanks to healthy ingredients, they only taste that way! Now you can have your cake (eh, cookie) and eat it too. 


There’s something about eating a cookie. I don’t know if it’s possible to eat a cookie and be mad at the  same time.


Last night, I made a very experimental cookie recipe. Once we tested them, Landon gave me a big smile and two thumbs up. 


I’d call that a success. 

These cookies are gluten free and sweetned only with stevia and dates! 


Even though they are healthy, they aren’t lacking in flavor. That’s a win win, if you ask me! 


Ingredients 

  • 2 c. Oats (1 c. whole oats, 1 c. Oat flour) 
  • 1/4 c. Pitted dates 
  • 1 tsp. Cinnamon 
  • 2 Tbsp. Chia seeds 
  • 2 Tsp. Baking powder 
  • 3 Packets Stevia 
  • 1/2 c. Melted peanut butter 
  • 1/3 c. Melted coconut oil 
  • 2 large eggs  
  • 1/2 c. Dark chocolate chunks 

Method 

Blend one cup oats with dates. Pour into bowl, add rest of oats, and add all other dry ingredients. In a separate bowl, combine wet ingredients. Mix wet with dry and add chocolate chunks at the last.

Place cookie dough in fridge for 10 minutes while you preheat the oven and clean up the mess you’ve made. 😉 

Once 10 minutes has passed, shape into cookies using 1 1/2 tbsp. of dough. 


Bake 10 minutes at 350.
